Potato Salad Sandwiches

Yesterday i made potato salad sandwiches for Kai… and ended up making enough potato salad for everybody else. [I didn't know that 4 potatoes and 3 eggs would be so much!]
Those who enjoyed the outflow: my sister and Kai’s Mum.
And there are lots more to spare… I can feed another 4 persons!
All wrapped up with mashed potato, boiled eggs, cucumber… and organic mayonnaise, olive butter, parsley, pepper and salt for taste.

Give me the recipe! I made mushroom egg sandwiches this morning, in a hurry. Fortunately Liv didn’t think that was awful. Ahaha. I need more new recipes for breakfasts.
Mushroom sandwiches sound yummy~ I wouldn’t make breakfast in the morn if i am working!
Peel 4 large potatoes [about the size of your palm] and boil them till you can break them apart with relatively little force. Put them in a bowl, use a fork to turn them into break them down into a pile of small potato chucks.
Add 3 hard-boiled eggs into the same bowl, break them up into smaller pieces.
Add in 5 pinches of salt, 2 heaped spoonfuls of mayonnaise, 3 flat spoons of butter, a liberal dashes of pepper according to taste, 1 heaped spoonful of parsley… and then mix everything well.
When your potato chucks turn into mashed potato and when the parsley is evenly mixed, it’s ready for cucumbers.
I cut cucumber slices into little triangles to be mixed in a separate bowl before putting it onto wholemeal bread.
*You might wanna put in more mayonnaise. Kai said she would like it with more mayonnaise. Then again, organic mayonnaise doesn’t have the richness that ordinary mayonnaise have… so you should test-taste it first!
